Authentic Parmigiana can be quite expensive, especially the longer it is aged. Make sure that the words ” Parmigiana-Regianno” is stamped into the rind.

Cabrales, is a mixture of goat, cow and sheep milk, has a semi-firm texture and a spicy flavor. The cheese is aged in the cold, humid atmosphere of caverns or caves of Cabrales and three villages of the Concejo de Peñamellera Alta.
